How to Make SPAGHETTI CARBONARA
- Pasta 200 g Spaghetti or Linguine pasta
- Bacon 150 g cold smoked
- Eggs 3 pcs. fresh, we will use yolks
- Olive oil 1 tbsp. sh. 1-2
- Garlic 1 clove
- Black pepper 1 pinch of ground
- Salt 1 pinch
- Hard cheese 50 g
HOW TO PRODUCE
- Cook pasta in salted water according to package directions.
- Fry the diced bacon together with the peeled clove of garlic in a pan on heated olive oil.
- When the bacon is browned, remove the pan from the heat and remove the clove of garlic (we won’t be using it again).
- After that, separate the egg yolks from the whites and beat the yolks in a separate bowl until stiff.
- Add grated cheese and some black pepper.
- When the pasta is done cooking, drain the water but reserve about one ladle of the cooking liquid.
- Then put the pasta in a pan with the cooked bacon, add some starchy water left over from cooking the pasta, and add the egg yolk mass.
- Mix everything quickly until the pasta is covered with the creamy sauce.
- Serve with freshly ground pepper and some cheese.
