Mini Pancakes with Condensed Milk: A Sweet & Easy Recipe

If you love pancakes but want something fun and bite-sized, these mini pancakes are the perfect treat! Crispy on the outside, soft on the inside, and drizzled with creamy condensed milk, they are ideal for breakfast, dessert, or a snack. Plus, they are super easy to make!

Ingredients:

✔️ 1 cup (125g) all-purpose flour
✔️ 1 tbsp sugar
✔️ 1 tsp baking powder
✔️ ½ tsp baking soda
✔️ ¼ tsp salt
✔️ ¾ cup (180ml) milk
✔️ 1 egg
✔️ 1 tbsp melted butter
✔️ ½ tsp vanilla extract
✔️ Butter or oil for frying
✔️ Sweetened condensed milk for topping


Instructions:

1️⃣ Prepare the batter: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

2️⃣ In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.

3️⃣ Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. (Avoid overmixing—small lumps are fine!)

4️⃣ Heat a non-stick pan over medium-low heat and lightly grease it with butter or oil.

5️⃣ Cook the pancakes: Drop small spoonfuls of batter onto the pan, forming mini pancakes. Cook for about 1-2 minutes per side until golden brown.

6️⃣ Transfer to a plate and repeat with the remaining batter.

7️⃣ Serve & enjoy: Arrange the mini pancakes in a basket or plate and drizzle generously with sweetened condensed milk.

8️⃣ Enjoy them warm and soft!
